Ingredients
- 4 ears of fresh corn husked and cut off the cob
- 1 cup of cherry tomatoes - cut in half
- 1 shallot - finely chopped
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/4 cup chopped mint
- 1/4 cup crumbled feta
Lime Vinaigrette
- 1/4 cup olive oil
- Juice of 1 lime
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon red chili flakes
- 2 teaspoons honey
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon cumin
Instructions
- In a saucepan, heat 1 tablespoon of olive oil on high heat for 2 minutes. Then add in the shallot and corn and allow it to cook on high heat for 6 minutes, moving it around enough but you want to get little char marks on the corn. Season with salt and pepper.
- After 6-7 minutes, take it off the heat and set aside.
Now make the vinaigrette!
- Simply mix all ingredients together with a whisk. Taste to see if it needs more salt!
- Once the vinaigrette is ready you can assemble your salad!
- In a large but pretty serving bowl, pour in the cooled corn and shallot, then add in the cherry tomatoes and mint. Pour the dressing over the salad and give it a good toss.
- Last step is to top the gorgeous salad with a little fresh crumbled feta!
