Marinated Onions

Teri Turner of No Crumbs Left is the mastermind for these marinated onions! She loves them and seems to put them on everything. And now I know why. Marinating them takes the raw edge off of the onions while also making them applicable to lots of different foods. 

They would be great on a sandwich, a salad, a Mediterranean bowl or even eggs in the morning! They take a dish from simple to complete and it is so, so, so easy!

My recipe just has one more ingredient than Teri’s recipe and that is salt! Ha! Are you surprised?

Enjoy this simple yet essential, topping, condiment or as Teri says, “Magic Elixirs!”

Marinated Onions

Ingredients

  • 1 red onion-thinly sliced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 teaspoons salt
  • 2 teaspoons dried oregano

Instructions

  • Simply mix together the olive oil, red wine vinegar, salt and oregano together. Pour over the sliced red onions I a small bowl. Allow them to marinate for at least 2 hours before putting them on literally ANYTHING! I paired them with my falafel bowl last night for dinner!
  • They keep for 4-5 days in the refrigerator!

I end up having really detailed dreams in which I know I’m sleeping and I’m like kinda awake and kinda snoozing. This makes for a not very well rested night but really fun ideas in the morning.

I have literally been dreaming about mood boards. Creating them... what they represent, the colors, the feeling. I love it. They make me excited about a vision I’m pulling together.

This vision here is representative of a few things:
1. TWO new SPICES that I’m releasing VERY SOON. ✨
2. My vision for the future of Emily Jilg Co.
3. A reminder to TRY and slow down a little and enjoy my surroundings, nature, people and small little things.

See, I have this little problem. I constantly feel like I need to be creating, inventing, producing to be successful. I feel like if I slow down I’m losing not winning. I think my time as a  media salesperson at the LA Times gave lots of knowledge and taught my a few silly “rules”. One rule: “you’re only as good as your last sale.” TBH, can’t really get this one of out my mind. Knowledge wise: get comfortable with being rejected over, and over and over. And while your’re at it, invite failure because it’s the only way to learn.

I love being an entrepreneur, owning my own business, creating , exploring, learning from my successes and failures and finding new passions. But while I’m here, I also just want to remind myself (and you) that your productivity does not equate to your value or self worth. 🤍

Anyways- that’s all for now. Now back to dreaming 💭🦋.

Love this unique cake so much! It’s super buttery and decadent but has no butter 🧈 in the recipe! The olive oil gives it a really yummy rustic taste. It’s great as dessert but also could be just perfect with a cup of tea 🫖 in the afternoon for a Bridgerton moment, darling 👑 🌸⛲️🎠🏹!
