Baked Halibut with a Crispy Topping
I love this recipe inspired by Ina Garten’s Baked Cod recipe from her new cookbook Modern Comfort Food. I do a play on this recipe with halibut and some delicious spices of course!
Ingredients:
2 fillets of halibut about 6-8 oz. each
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup Panko breadcrumbs
2 tablespoons chopped Italian parsley
Zest of 1 lemon
2 cloves of garlic finely chopped
1 teaspoon Signature Spice
3 tablespoons melted unsalted butter
Juice of 1/2 a lemon
1/4 cup dry rose wine
Instructions:

Preheat oven to 400º.

Drizzle 3 tablespoons of olive oil into a baking dish just large enough to hold the fish.

Place the two fillets into the baking dish and turn them in the olive oil, coating each side of the fish.

Season the fillets with salt and pepper.

Put the fish in the oven for 10 minutes.

Meanwhile, mix together the Panko, Italian parsley, garlic, lemon zest, melted butter and Signature Spice in a small bowl. Set aside.

After the fish has cooked for 10 minutes, pull it out and pour the rose wine and lemon juice directly over the filets.

Then pack the Panko mixture on top of the fillets. Try to use as much of the topping as possible! If a little falls off the fish, its ok! It will just give it more flavor!

Bake the fish for another 10 minutes and the topping is golden brown.
