Corn and Tomato Salad with Mint and Feta Cheese

4 ears of fresh corn (husked and cut off the cob)

1 cup of cherry tomatoes – cut in half

1 shallot – finely chopped

1 tablespoon olive oil

2 teaspoons salt

1 teaspoon pepper

1/4 cup chopped mint
-
1/4 cup crumbled feta
Lime Vinaigrette

1/4 cup olive oil
-
Juice of 1 lime

1 tablespoon apple cider vinegar
-
1/2 teaspoon red chili flakes

2 teaspoons honey
-
1 teaspoon salt
-
1 teaspoon pepper
-
1/2 teaspoon cumin

In a saucepan, heat 1 tablespoon of olive oil on high heat for 2 minutes. Then add in the shallot and corn and allow it to cook on high heat for 6 minutes, moving it around enough but you want to get little char marks on the corn. Season with salt and pepper.

After 6-7 minutes, take it off the heat and set aside.
Now make the vinaigrette!

Simply mix all ingredients together with a whisk. Taste to see if it needs more salt!

Once the vinaigrette is ready you can assemble your salad!

In a large but pretty serving bowl, pour in the cooled corn and shallot, then add in the cherry tomatoes and mint. Pour the dressing over the salad and give it a good toss.

Last step is to top the gorgeous salad with a little fresh crumbled feta!
