Lucy’s Meatballs

Ingredients

  • 1/2 pound ground veal
  • 1/2 pound ground pork
  • 1 egg
  • 1/2 cup panko breakcrumbs I like @kikkomanusa
  • 1/2 cup cottage cheese 🤪🤪🤪- I like @good_culture
  • 2 tablespoons finely chopped basil
  • 2 tablespoons finely chopped Italian parsley
  • 1/3 cup pulverized or grated onion
  • 2 teaspoons @diamondcrystalsalt salt
  • 1/2 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons @baronciniimportandco olive oil

Instructions

  • Mix ingredients together in a bowl just until combined- do not over work or mix because it will make your balls tough (lol🤭)
  • Shape into roughly 16-18 balls and bake on a cookie sheet for 25 minutes at 400 degrees. Then simmer the meatballs in your sauce of choice! My sauce is the Marcella Hazan’s tomatoes sauce (find it on my website!).
  • Top the meatballs over buttery/garlicy spaghetti and garnish with little fresh Parmesan and basil 🌿 .
