Meal Ideas this week!
Figuring out what to feed your growing baby can be so daunting. You need something quick and easy but you also want to make sure they’re getting proper nutrients, exploring new flavors and textures and you want to be able to eat it, too! I get it and that’s why I started this tiny gourmets series! COMMENT “MEALS” and i’ll DM you all the meals and full recipes!

Pork Carnitas Plate:
Cut 1 pound of pork shoulder or butt into chunks. Season with 1 teaspoon salt, 1 teaspoon oregano and 1 teaspoon cumin. Toss together and roast in a baking dish with 1 cup of water covered with tin foil. Roast at 300 degrees for 1 hour or until fork tender. Make sure there is a little liquid always in the baking dish to prevent burning. Served with steamed white rice, kiwi which is full of vitamin c and refried beans. For the refried beans I just add a 1 tablespoon of grated onion into a pan with 2 teaspoons olive oil. I sautee it for 5-6 minutes on medium heat and then add in a can of pinto beans with the juice. Cook on medium heat for 5 minutes and then start mashing the beans with a wooden spoon. Season with a little salt and pepper.
High Protein Summer Vegetable Pasta with mango-
1 small yellow squash- but into cubes
1 small floret head of broccoli-about 1/2 cup chopped
1/2 cup sungold tomatoes or cherry tomatoes- cut into bite sized pieces
1 clove of garlic- grated
5 leaves fresh oregano – chopped (optional)
Parmesan cheese
Butter
Olive oil
salt
Banza Pasta- about 1/3 of a box
In a saucepan, add 1 tablespoon of olive oil and 1 tablespoon of butter. Heat to medium heat and add in the vegetables. Season with a small pinch of salt- about 1/4 teaspoon. Saute on medium heat for 10 minutes and then add in the garlic and fresh oregano. Cook until vegetables are soft. Cook pasta of choice and add directly into the pan with the vegetables with a little pasta water- about 1/4 cup. Add in a little Parmesan cheese and stir together. I chose spaghetti and cut it up for Posey. This is two servings for my 16 month old daughter. Full of veggies, fiber, vitamins and protein without the meat thanks to Banza noodles.

Sardine Plate: Just because you think sardines are gross doesn’t mean your baby does. These things are packed with SO many good things for your baby’s growth and brain development. It’s also so easy to serve. Alongside blueberries and sweet potato and broccoli hash. I just chop up my broccoli and cube my Japanese sweet potatoes and add them to a pan with 1 tablespoon of butter and a pinch of salt. saute on medium heat for 3-5 minutes before adding in about 1/2 cup of water and cover to steam until soft.
Baked Cod/ Sea bass, Black beans and apricots- season 1/4 pound of flaky white fish like cod, seabass or halibut with 1/2 teaspoon of salt and drizzle with 1 tablespoon of olive oil. place in a baking dish and add 1/4 cup of chicken broth and lighly cover with tin foil. Bake for 15-20 minutes or until fully cooked.
Out for dinner! Rotini pasta with pomodoro tomato sauce from our local Italian restaurant!
Turmeric Yogurt Chicken Curry – add 1 cup greek yogurt, 1 teaspoon turmeric, 1 teapsoon cumin, 1 teaspoon grated garlic, 1/2 teaspoon paprika and 1 teaspoon salt into a bowl, whisk together and add in 4 boneless, skinless chicken thighs and cover with marinade. Mix together and cover and place in refrigerator for 1 hour. Next in a crockpot add 1 diced yellow bell pepper, 1 diced red onion and 1 cup chopped tomato into the crockpot with 2 tablespoons butter. add 4 cups of chicken broth and the chicken with the marinade into the crockpot. Cook on low heat for 4 hours and serve over white rice. season with salt and pepper at the end to your liking!
