Almond Butter and Date Energy Bites

3/4 cup rolled oats

1/2 cup almond butter

1/4 cup chia seeds

6-8 medjool dates – pitted

2 teaspoons maple syrup or honey

1/4 cup shredded coconut – unsweetened

1/2 cup Lily’s chocolate chips

Pulse all the ingredients together in a food processor until they start to ball up, about 30 seconds.

Pour the mixture out onto a baking sheet and start rolling into bite sized balls. Store in a plastic bag and keep them on the counter or the refrigerator!
