Banana Blueberry Buckwheat Pancakes

Ingredients

  • 1 ripe mashed banana
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup buckwheat flour
  • 1/2 teaspoon baking powder
  • Small handful of blueberries 🫐 cut into quarter pieces!

Mix everything together in a medium sized bowl.

  • 1 -2 tablespoons of butter for sizzling~

Instructions

  • In a large skillet 🍳 add butter on medium heat.
  • Once melted add pancakes to pan.
  • Cook on medium heat until little bubbles start to form on the pancakes- about 4 minutes.
  • Flip and cook until golden.
  • I cut Posey’s pancakes into small bite sized pieces and served them once cooled enough.
