5 Days of Meals for your Tiny Gourmets
Meal Fatigue is REAL. Trying to think of new ideas that are interesting and healthy can be exhausting. I’m here to help. Here is a sample of a five day meal plan for your tiny gourmets:
Monday
Breakfast: 1 egg scrambled with greek yogurt and blueberries.
Lunch: Deli Turkey in bites, cottage cheese and a banana
Dinner: Poached salmon with cous cous and steamed spinach
Tuesday:
Breakfast: Birch Bender Pancakes with slices of cantaloupe
Lunch: Chicken and Spinach Meatballs with strawberries
Ingredients
- 1 pound of ground chicken
- 1/4 cup panko breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 cup wilted spinach- finely chopped
- zest and juice of 1 lemon
- 1/3 cup grated pecorino cheese
- 1 garlic clove grated
- 1 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Mix everything together in a bowl and using a small ice cream scoop, scoop balls onto a baking sheet lined with parchment paper. Bake at 350 degrees for 25 minutes.
Dinner: Turkey Bolognese Pasta
Ingredients
- 1/2 pound ground turkey
- 1/3 cup chopped onion
- 1 garlic clove grated
- 1 280 z can crushed tomatoes
- 1 tsp. salt
- 2 tablespoons butter
- 2 tablespoon olive oil.
Instructions
- First, add olive oil and butter to a medium pan on medium heat. Next add in the onion and season with 1/2 tsp salt. Sweat the onions down for about 5 minutes and then grate in the garlic. Next add the ground turkey and break it up with a wooden spoon until browned. Add the can of tomatoes and the rest of the salt. Simmer on medium heat for about 15 minutes before serving over your noodles of choice! I topped mine with a little pecorino cheese!
Wednesday
Breakfast: French toast with yogurt and ripe peeled peach
Lunch: Broccoli fritters and cottage cheese
Ingredients
- 1 1/2 cups-2 cups finely diced broccoli florets
- 3/4 cup shredded cheddar cheese
- 1/3 cup panko breadcrumbs
- 2 eggs
- 1/2 cup of ricotta cheese
- 1/4 tsp salt
- tiny bit of pepper
- 1 tablespoon olive oil
Instructions
- First, steam the broccoli florets for about 5 minutes until soft. Allow to cool and then add to a medium sized bowl. Add in the cheese, panko, ricotta cheese, eggs, olive oil and salt and pepper. Mix together well and then spoon into an oiled muffin tin. Should make about 18 little broccoli cheese fritters. Bake at 350 degrees for 15-18 minutes.
- I stored 9 in a container for the refrigerator and the rest in another container in the freezer. The fritters will be good for up to 3 days in the refrigerator and about 3 weeks in the freezer. Great to reheat for breakfast, snacks, lunch, for yourself. Really anytime
Dinner: Boiled chicken thighs cut into pieces, cheese quesadilla, mashed avocado
Thursday
Blueberry and Buckwheat Pancakes
Banana Blueberry Buckwheat Pancakes
Ingredients
- 1 ripe mashed banana
- 1 egg
- 1/2 cup milk
- 1/2 cup buckwheat flour
- 1/2 teaspoon baking powder
- Small handful of blueberries 🫐 cut into quarter pieces!
Mix everything together in a medium sized bowl.
- 1 -2 tablespoons of butter for sizzling~
Instructions
- In a large skillet 🍳 add butter on medium heat.
- Once melted add pancakes to pan.
- Cook on medium heat until little bubbles start to form on the pancakes- about 4 minutes.
- Flip and cook until golden.
- I cut Posey’s pancakes into small bite sized pieces and served them once cooled enough.
Lunch: Turkey Patties and noddles
Ingredients
- 1 pound ground turkey
- 1 medium zucchini grated
- 1/2 cup ricotta cheese
- 1 egg
- 1 small clove of garlic grated
- 1/4 tsp salt
- tiny bit of pepper
- 2 teaspoons olive oil
Instructions
- Mix all items together in a bowl with your hands and shape into little patties and place onto a baking sheet lined with parchment paper- should make about 18. Bake at 350 degrees for 22 minutes. Cut into bit sized pieces for baby! Stores great in the freezer as well.
Dinner: Pork Tenderloin cut into small pieces, “creamed spinach” with cottage cheese, sweet potatoes- roasted.
Friday
Breakfast:
Tiny Gourmets~ Banana & Apple Muffins
Ingredients
- 2 bananas large
- 1/2 cup applesauce
- 2 tablespoons milk
- 1/2 cup brown sugar
- 1 egg
- 6 tablespoons melted butter unsalted
- 1 teaspoon vanilla extract
Dry ingredients
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
For tins
- 1 tablespoon butter
Instructions
- First mix together the dry ingredients and set aside
- Then whisk together the mashed bananas, applesauce, egg, butter, milk, sugar and vanilla extract.
- Pour the dry ingredients into the wet ingredients and mix until combined.
- Next add a small pat of better to each muffin holder in the muffin tin. 1 tablespoon should be enough for 18 muffins. Put it in the oven for 3-4 minutes and then take it out.
- The butter should be browned and smell amazing! This will give your muffins a nutty richness.
- Scoop the muffin batter into the tin crevasses, on top of the browned butter. Should make 18 muffins.
- Bake at 350 degrees for about 15 minutes.
Lunch: Rice and Black beans with a banana
Dinner: Spaghetti and meatballs!
Lucy’s Meatballs
Ingredients
- 1/2 pound ground veal
- 1/2 pound ground pork
- 1 egg
- 1/2 cup panko breakcrumbs I like @kikkomanusa
- 1/2 cup cottage cheese 🤪🤪🤪- I like @good_culture
- 2 tablespoons finely chopped basil
- 2 tablespoons finely chopped Italian parsley
- 1/3 cup pulverized or grated onion
- 2 teaspoons @diamondcrystalsalt salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons @baronciniimportandco olive oil
Instructions
- Mix ingredients together in a bowl just until combined- do not over work or mix because it will make your balls tough (lol🤭)
- Shape into roughly 16-18 balls and bake on a cookie sheet for 25 minutes at 400 degrees. Then simmer the meatballs in your sauce of choice! My sauce is the Marcella Hazan’s tomatoes sauce (find it on my website!).
- Top the meatballs over buttery/garlicy spaghetti and garnish with little fresh Parmesan and basil 🌿 .
